Raclette
Allegedly invented by a chilly Swiss shepherd who turned his cheese into a hot meal by ‘roasting’ it directly on the campfire, this mountain staple of melted cheese scraped over potatoes will certainly coat your ribs.

Tartiflette
Tartiflette is a gratin of Reblochon cheese, potatoes, onions and smoked bacon lardons, layered up and baked until sizzling. The ultimate in comfort food – serve with a salad if you want to make yourself feel better about all those calories!

This party staple from the 1970s needs no introduction. Use cheeses like Comté and Gruyère for your sauce and rub the fondue pot with garlic first to maximise on flavour. Croutons and crudités to the ready!
