Ingredients
4 pears
60g butter
75g brown sugar
2 eggs beaten with a little milk, a little sugar and a drop of vanilla
Clarified butter for frying
4 slices of white bread
Directions
1Peel and core the pears.
2Heat the butter and add the pears, cook until golden.
3Add the sugar and cook for 5 minutes. Leave to cool.
4When ready to serve, reheat the pears in the oven.
5Heat the clarified butter in a frying pan. To clarify butter: put about half a packet of butter in a small pan and heat very gently, or even leave it on the back of the stove in the warm for the curds and whey to separate. Just use the clear butter.
6Dip the bread in the egg and then fry the slices on both sides.
7Arrange on plates and top with the pears.
8Dust with icing sugar and finish with a sprig of mint.
9Serve with tarragon ice-cream, crème fraîche or mascarpone mixed with crème fraîche, vanilla and sugar.
