A burger inspired by the Rolling Stones has won the cup for best burger in France.
The theme for the 2023 contest, organised by meat brand Socopa at the Porte de Versailles in Paris, was rock n roll, linking two icons of the 1950s – music and burgers.
Matthias Carré’s Paint it Black, which was made with beef tongue and tonkatsu sauce, won the Coupe de France du Burger 2023 in a unanimous decision by the judges.
President of the jury Arnaud Baptiste said: “It may not have been the most rock’n’roll burger, but it was certainly the tastiest.”

It was third time lucky for 30-year-old Carré, who runs the restaurant Red Bear N’Burger in Compiègne, Oise, as he has been in the group of 25 finalists for the past two years. He takes home the top prize of €2,500.
Carré’s winning burger bun was made using a combination of vegetable charcoal dough and a classic dough. The patty was made with beef tongue and ground meat, accompanied by a tonkatsu sauce, a vegetable charcoal cheddar to wrap the meat and a mixture of garlic, chervil and tarragon.
He said in a statement: “I would also like to thank my customers, who have become more than just customers. They became friends, confidants, unconditional supporters […] This competition to me is more than just a cooking contest. It’s a real showcase for our profession, an opportunity to show our passion to as many as possible, and I’m proud to be part of it.”
