A chef from the Île de France has served up France’s best burger of 2024. 

The Coupe de France du burger, organised by meat brand Socopa, was held at the Sandwich & Snack Show at the Porte de Versailles in Paris. 

First place went to Anthony Pautrat, chef de cuisine at Up To You in Montigny-le-Bretonneux, in the Yvelines department, whose creation was called ‘Ruminez-moi’. Second place went to Jérémy Garnier with his burger called ‘Beef Effect’, and Guillaume Redon took third place with his ‘Super Smash Beef’. 

The theme for the ninth edition of the contest was ‘Beef Spirit’, and Pautrat says he was inspired by the diet of cattle to create his burger, using hay to smoke the meat and corn to create a hot sauce flavoured with whisky. Texture was important, he said, with crispy Bostock brioche complementing crunchy Cecina chips and melting PGI cheese from the Aldudes valley.  

“The 2024 theme is an opportunity for the candidates to promote beef in all its dimensions, at the heart of an exceptional burger,” said the competition organisers. “Rooted in our culinary tradition, beef is associated with the simple pleasure of conviviality. It carries with it the freedom of wide open spaces, the ancestral pleasure of fire, the warmth of shared meals and the pride of noble food…”
