This breathtaking dish will wow your party guests at Christmas. It may be a little fiddly, but it will be worth it to see the looks of astonishment when you present it to your friends and family! 


Ingredients

  • 200g Abondance cheese 
  • 25cl milk 
  • 25cl cream 
  • 200g fresh girolles 
  • 10g butter 
  • 80g rustic bread 
  • Salt, pepper 
  • 3g Agar    

Directions

1Cut the Abondance into cubes.

2Heat the milk, cream, salt and pepper, add the cheese and melt.

3Turn off the heat, add the agar and mix.

4In a siphon, use one or two gas canisters (depending on the characteristics of your siphon) and let it cool for at least 1 hour.

5Wash the girolles and fry them in butter. Season with salt and pepper.

6Cut the bread into croutons and toast them.

7Warm the siphon in a double boiler for a few minutes.

8Arrange a few girolles on a plate, cover with the foam and decorate with croutons, girolles and edible flowers (optional). Serve immediately.
