Spruce up brunch this weekend with this delicious eggs Florentine with watercress recipe, the whole family will enjoy.

Ingredients
- Hollandaise sauce
- 4 Eggs
- 2 English muffins
- Butter
- 80 g Watercress
- Black pepper
Instructions
- In a pan of boiling water, poach the eggs to your preference.
- Meanwhile, slice each muffin in half and toast. Spread with a little butter.
- Assemble the muffins on plates, topping with the watercress and eventually, a poached egg on each muffin slice. Drizzle with Hollandaise and cracked black pepper.

Eggs “Florentine” are always made with spinach and watercress isn’t used, even as decoration.
