Spruce up brunch this weekend with this delicious eggs Florentine with watercress recipe, the whole family will enjoy.


Ingredients

  • Hollandaise sauce
  • 4 eggs
  • 2 English muffins
  • Butter
  • 80g Watercress
  • Black pepper

Directions

1In a pan of boiling water, poach the eggs to your preference.

2Meanwhile, slice each muffin in half and toast. Spread with a little butter.

3Assemble the muffins on plates, topping with the watercress and eventually, a poached egg on each muffin slice. Drizzle with Hollandaise and cracked black pepper.
