The Michelin Guide awards 62 new stars across France

The Michelin Guide has unveiled its France & Monaco 2026 restaurant selection at a glittering ceremony held at the Grimaldi Forum in Monaco, revealing another year of change, creativity and fierce competition at the top of French gastronomy.  

In this latest edition, inspectors have awarded 62 new stars in total, including one new three-star restaurant Les Morainières in Jongieux (Savoie) – seven new two-star restaurants and 54 new one-star establishments, reflecting what Michelin describes as a particularly dynamic culinary landscape. In total, the 2026 selection now recommends 668 starred establishments across France and Monaco: 31 with three stars, 84 with two stars and 553 with one star. 

Gwendal Poullennec, international director of the Michelin Guide, praised the ‘vitality’ of the French and Monegasque gastronomic scene. “Our inspectors have been particularly impressed by the audacity of a new generation of chefs who are opening very personal houses throughout France and Monaco,” he said. “Often led by couples, with complementary roles between savoury and pastry, or between the kitchen and the dining room, these life projects reflect the entrepreneurial energy and strong local roots that characterise gastronomy today. From tables rooted in the terroirs to more contemporary and international cuisines, this diversity confirms that restaurants remain more than ever essential places of openness, meeting and sharing.”

Many of these ventures reflect a renewed focus on local identity. The wave of new one-star restaurants illustrates this momentum particularly clearly. Spread across the country, these addresses reveal a wide range of influences and approaches, from menus built around ultra-local sourcing to more experimental concepts that draw on global culinary traditions. Michelin notes that some regions have been especially active this year, notably Provence-Alpes-Côte d’Azur, Auvergne-Rhône-Alpes, the Grand Est and Île-de-France. 

Another strong theme in the 2026 guide is the growing importance of sustainability and responsible gastronomy. Fourteen restaurants have newly been recognised for initiatives that emphasise seasonal produce, close relationships with producers and environmentally conscious practices, bringing the total number of establishments highlighted for such commitments to more than 100. 

Alongside the stars themselves, Michelin also presented its special awards, celebrating the professionals who shape the dining experience beyond the kitchen. These include honours for sommellerie, service, young chef talent and mentorship, recognising figures who contribute to the transmission of culinary knowledge and the refinement of hospitality. 

The guide continues to champion pastry with its Passion Dessert selection, which this year welcomes ten additional restaurants where desserts play a central role in the gastronomic experience. 

Overall, the Michelin Guide France & Monaco 2026 recommends more than 3,000 restaurants, including 430 Bib Gourmand establishments, highlighting addresses that combine quality cooking with good value. The new edition of the printed guide will be available from March 20.
