If you’re looking to brighten a dreary January day, then the Connaught Patisserie in London has the answer. 

The patisserie is helmed by celebrated French chef Nicolas Rouzaud, who has designed a stunning galette des rois to mark Epiphany on January 6. This classic French pastry celebrates the Three Kings’ visit and features delicate, golden layers of puff pastry encasing an almond frangipane. Hidden within is a fève – a tiny porcelain charm. Whoever finds the fève is crowned King or Queen for the day in what is a much-loved French tradition.  

Nicolas’ version of the ‘Three Kings’ cake features a delicate pattern inspired by seasonal wildflowers, celebrating new life and renewal, perfectly encapsulating the spirit of Epiphany and the start of a new year. Inside the buttery, flaky layers of puff pastry lies a luxurious almond frangipane filling crafted from premium Marcona almonds, sourced from Spain, which are known for their sweet and delicate flavour. The fève in this case takes on the form of the Connaught hound, an emblem of the hotel.  

Beautifully crafted and steeped in tradition, Rouzaud’s Galette des Rois is more than a dessert – it’s an edible masterpiece that’s almost too beautiful to eat. But only almost! 

Priced £50, the Galette des Rois is available until January 31, 2025, from the Connaught Patisserie in Mayfair (deliveries are available in London). Or you can treat yourself to an individual slice (£7.50 for takeaway or £9 for dining in).
