With summer fast approaching, combine juicy melons and succulent tomatoes for this delicious, refreshing salad.


Ingredients

  • ¼ honeydew, sliced into thick crescents
  • ¼ cantaloupe, sliced into thick crescents
  • 1 red tomato, sliced into rounds
  • 1 yellow tomato, sliced into rounds
  • Fresh rocket, olive oil
  • Flaky salt & red pepper flakes

Directions

1Spread out a small handful of rocket, then cover it with: ¼ honeydew, sliced into thick crescents ¼ cantaloupe, sliced into thick crescents, 1 red tomato, sliced into rounds,1 yellow tomato, sliced into rounds.

2Then sprinkle on top… the remaining fresh rocket, olive oil, flaky salt & red pepper flakes. (If you have spicy oil on hand sprinkle that instead.)

3Serve and enjoy.

    • Rocket is a type of lettuce, it leaves a tasty and peppery flavour and it’s delicious in a tasty salad! 😉
