An easy recipe to make potato croquettes, a vegetarian snack that’s fit for a king: find out how to prepare these crunchy potato croquettes, made from scratch.


Ingredients

  • 1 kg potato 
  • 30g butter
  • White pepper to taste
  • Nutmeg to taste
  • 30g Parmesan, grated
  • 2 eggs
  • Flour (as needed)
  • Breadcrumbs (as needed)
  • Parsley to taste
  • Salt to taste

Directions

1Peeling the potatoes, cut into four pieces, put them into cold, salted water and then bring to boil.

2Once cooked, drain and smash them in a pan with some butter, over a low flame.

3When the purée seems compact and smooth, remove from heat and season with salt, white pepper, nutmeg, the grated cheese and then an egg yolk.

4Mix everything well.

5When the mixture cools, create the croquettes, pass them through the flour, a beaten egg and then the breadcrumbs.

6Fry the croquettes in boiling oil, making sure they’re evenly golden.

7Pat off the grease and serve the potato croquettes warm with fresh parsley.

  1. I bake my potatoes ( not boiling) mash with butter ( cool ) add 1 beaten egg, one chopped shallots or green onion (white and green )
    Any leftovers or chopped ham, tuna and scant of mustard and voila MY CROQUETTES!
    Plain croquettes roll in herbs the Provence.

  2. Bake potatoes ( not boil) mash with butter (cool) add 1 beaten egg , small chopped shallots or green onion (white and green).
    Add any left over meat ,chicken, ham or canned tuna, scant of dijon mustard.. boils MY CROQUETTES!
