An easy recipe to make potato croquettes, a vegetarian snack that’s fit for a king: find out how to prepare these crunchy potato croquettes, made from scratch.


  • 1 kg potato 
  • 30g butter
  • White pepper to taste
  • Nutmeg to taste
  • 30g Parmesan, grated
  • 2 eggs
  • Flour (as needed)
  • Breadcrumbs (as needed)
  • Parsley to taste
  • Salt to taste


1Peeling the potatoes, cut into four pieces, put them into cold, salted water and then bring to boil.

2Once cooked, drain and smash them in a pan with some butter, over a low flame.

3When the purée seems compact and smooth, remove from heat and season with salt, white pepper, nutmeg, the grated cheese and then an egg yolk.

4Mix everything well.

5When the mixture cools, create the croquettes, pass them through the flour, a beaten egg and then the breadcrumbs.

6Fry the croquettes in boiling oil, making sure they’re evenly golden.

7Pat off the grease and serve the potato croquettes warm with fresh parsley.

  1. It’s not quite correct that the mashed potato and the butter have to be reheated unless the potato is cold in the meantime. In addition, the potato should in no way be “hot” when the egg (I only use egg yolks) is added. If it’s too hot the egg cooks before it can be beaten in – and not “seasoned – turning into small egg pieces instead of binding it and the whole thing is ruined. Of course, one can save it by adding an additional egg yolk, and probably no one will notice.
