Is there anything better than delicious French Toast for an indulgent weekend breakfast or brunch? We’ve served ours with a sweet banana and cinnamon jam but use your favourite toppings to make it your own.


Ingredients

For the French toast

  • 3 large eggs
  • 60ml milk
  • 4 slices of your favourite bread
  • 2 tbsp of golden caster sugar
  • A few drops of vanilla essence
  • Pinch of salt
  • Generous knob of butter
  • Dusting of icing sugar

For the banana jam

  • 4 ripe bananas
  • 2 tablespoons of brown sugar
  • Large knob of butter
  • Cinnamon stick or pinch of ground cinnamon
  • Squeeze of lemon juice

Directions

1Using the Hand Blender jug and whisk attachment, whisk the eggs, vanilla, milk, sugar and salt until thoroughly combined.

2Lay the bread side by side in a shallow dish and evenly pour over the mixture. Leave the bread to soak whilst making the banana jam.

3Slice the bananas into thin pieces.

4In a pan, gently melt the butter with the cinnamon and then add the bananas, sugar and lemon juice.

5Cook gently for a few minutes until the bananas are softened and slightly breaking up.

6Keep warm and remove the cinnamon stick (if using) just before serving.

7In a large saucepan melt the butter and add two slices of the soaked bread.

8Cook until golden underneath and then turn over and cook the other side.

9Keep warm and repeat for the remaining two slices of bread.

10Serve toast with banana jam spread on top and drizzle with maple syrup or a dusting of icing sugar.

CHEF’S TIPS

  • Skip steps 4 – 7 if you don’t wish to top with banana jam
