Especially for Christmas, winemaker Guillaume Gonfrier, from Vignobles Gonfrier in Bordeaux, reveals his recipe for savoury madeleines. Best served with a Premières Côtes de Bordeaux, Château de Marsan… 


Ingredients

  • 50g chorizo 
  • 75g butter 
  • 2 eggs 
  • 1 tbsp caster sugar 
  • 100g flour 
  • 5 tbsp milk 
  • 30g grated Parmesan 
  • Pinch of salt 

Directions

1Remove the skin from the chorizo and dice it.

2On low heat, melt the butter.

3Mix the eggs, caster sugar and pinch of salt. Add the flour, then the melted butter and 5 tbsp milk. Mix until smooth. Stir in the Parmesan and chorizo.

4Preheat the oven to 200C, put the madeleine mixture in the moulds and bake for 10 to 12 mins until golden brown.

5Serve with a Premières Côtes de Bordeaux, Château de Marsan…
