For the first time in its storied history, Hôtel Lutetia on Paris’s Left Bank is hosting a Michelin-starred chef in residence – and not just any chef. From March 13 to April 3, Kazuyuki Tanaka, whose Reims restaurant Racine holds two Michelin stars, will be taking over the kitchen at Le Saint-Germain.  

For fans of haute cuisine, this is a rare chance to experience Tanaka’s distinctive blend of Japanese precision and French flair in one of the city’s most elegant settings. 

Tanaka’s menu reflects his talent for balancing delicate flavours and striking textures. Guests can choose from an à la carte menu of three starters and three mains, or go all in with the Discovery Menu – four and a half courses plus dessert for €145 (excluding drinks). Standout dishes include salmon with carrot, mango, sabayon, ginger and nutmeg; char with celery and Szechuan miso; and poultry with gambero rosso and cabbage. The residency runs for dinner only Monday to Friday. 

Tanaka’s path to culinary stardom began in Japan, but his career took shape in France after he moved there in 2006. He trained under some of the biggest names in French cuisine – Gilles Tournadre, Emmanuel Renaut and David Zuddas – before opening Racine with his wife, Marine, in 2015. His inventive fusion of Japanese and French influences quickly won over critics, earning Racine two toques from Gault & Millau, a third in 2018 and the coveted title of Grand de Demain. 

Lutetia has been a fixture of Parisian culture since it opened in 1910. Over the years, it’s played host to some of the world’s most famous creatives, including Josephine Baker, Pablo Picasso, Ernest Hemingway and Henri Matisse. Today, it remains a magnet for art, music and fine dining – and now, thanks to Tanaka, it’s adding a dash of Michelin-starred magic to the mix.
