Okay, so technically speaking it’s not actually a burger – but it is a great way to use up your leftover Christmas turkey. The avocado and watercress give the sandwich a real zing of freshness – a welcome change from all that stodgy festive food! If you haven’t got turkey, beef, lamb or pork will work just as well. Or if you have leftover veggies, try mixing them up with some mashed potato and forming them into patties and voilà! You have your very own veggie burger… topped with Comté, of course.
Ingredients
- 1 avocado
- Juice of half a lime
- Salt
- Pepper
- ¼ teaspoon sugar
- 4 sesame seed burger buns
- 3 large tomatoes
- 100g Comté
- 4 turkey breasts or leftovers from a whole roast turkey
- 2 glugs of oil
- ½ bunch of watercress
Directions
1Pit the avocado and cut into cubes. Place the avocado in a bowl and add the lime juice and sugar. Season with salt and pepper, then mash the avocado with a fork to create a paste.
2Slice the burger buns and grill for about 4 minutes.
3Slice the tomatoes and then the Comté into thin slices. Set both aside.
4Season the turkey with salt, then fry both sides for about 3-4 minutes.
5Assemble the cheeseburger by spreading avocado on the inside of both sides of each bun. Add the turkey and season with pepper. Layer the Comté slices on top and then the tomato. Sprinkle with watercress before topping with the bun.
