Caroline Vital Ballestrem, of one-woman catering company Aux Delices de Caroline, shows you had to make this delicious French treats with a citrusy tang.


Ingredients

  • 190g flour 
  • 5 eggs 
  • 21g sugar 
  • 200g unsalted butter 
  • 75g milk 
  • 8g baking powder 
  • 2 tsp of honey 
  • 1 tsp salt 
  • Zest of 2 oranges, 2 lemons and 2 limes 
  • 2 tbsp neutral oil 

Directions

1Melt the butter and set aside to cool.

2By hand only, mix the eggs with the sugar, zests, salt and honey. Add the oil, the flour and the baking powder until barely blended. Add the butter, mix, then add the milk. Cover and let it rest in the fridge overnight.

3Preheat the oven to 225C. Fill the moulds to about 90%.

4Bake the madeleines for 6 minutes then lower the temperature to 180C and continue cooking another 6 minutes. Remove them from the mould as soon as they are out of the oven.
