Got a sweet tooth for French pâtisserie but can’t tolerate gluten? Fear not. You too can tuck into some delightful madeleines, thanks to this recipe courtesy of gluten-free experts Schär.
- 80g Schär Mix C – Mix Pâtisserie (gluten-free flour)
- 150g butter
- 1tbsp wild honey
- 100g almond flour
- 200g icing sugar
- 4 egg whites
1Preheat oven to 180C.
2In a bowl, mix the butter and honey well and melt on a low flame until the mixture turns light brown.
3Combine the almond flour, icing sugar and gluten-free flour.
4Stir in melted butter and unbeaten egg whites. Beat the ingredients until smooth and divide into the silicone or buttered madeleine moulds.
5Wait a few minutes before removing from the moulds – and tuck in! Miam.
