When it comes to dessert, you don’t need to miss out thanks to this crème brûlée recipe from gluten-free experts Schär. 


  • 2 tbsp Schär Mix C – Mix Pâtisserie (gluten-free flour) 
  • 500ml milk 
  • 3 egg yolks 
  • 2 tbsp sugar 
  • 2 tbsp mascarpone cheese 
  • 2 vanilla pods 
  • 2 tbsp cane sugar 


1Add the sugar and vanilla pods to 400ml of the milk and bring to the boil. Remove the vanilla pods.

2Mix the egg yolks, flour and the rest of the milk in a separate bowl and add a little of the hot milk, stir and then put it all back in the pan.

3Constantly stirring, bring it back to the boil before straining and letting it cool.

4Once the mixture has cooled, stir in the mascarpone and pour into six ramekins.

5In a saucepan, dissolve the brown sugar in two tbsp of water and then pour over the crèmes.

6Allow to set but do not refrigerate – serve immediately.
