
Isigny Sainte-Mère Mimolette Scones
This recipe introduces a delightful twist on traditional scones, featuring the rich and nutty flavours of Isigny Sainte-Mère Extra-Old Mimolette cheese complemented by the sweetness of apple jelly. Perfect for an indulgent teatime treat or a savoury addition to any gathering, these scones combine French culinary excellence with British baking tradition.
Ingredients
50g of Isigny Sainte-Mère Extra-Old Mimolette
350g flour
1 pinch of salt
1 sachet of baking powder
85g of Isigny P.D.O. Isigny Sainte-Mère butter
2 tablespoons sugar
175 ml milk
1 jar of apple jelly
Preparation
– Preheat your oven to 220°C.
– In a bowl, mix the flour, salt, sugar and baking powder. Then add the Isigny A.O.P. Beurre doux Isigny Sainte-Mère in small cubes, mix until you get a sandy texture. Then add the Isigny Sainte-Mère Extra-Old Mimolette, grated into shavings using a peeler. Finally, pour in the milk and mix again.
– Roll out the dough on a baking sheet previously covered with parchment paper, the dough should remain thick, about 2 cm thick.
– Cut the scones into the raw dough and bake for 12 minutes (depending on the oven, this may vary). The scones should be lightly coloured.
– Garnish the scones with a hint of apple jelly and Isigny Sainte-Mère Extra-Old Mimolette shavings.
NOTES
Mimolette is a French cheese made from cow’s milk, known for its firm texture and unique taste. Production begins with the collection of raw milk from cows raised in the Isigny region. This milk is then heated and inoculated with specific lactic ferments. After coagulation, the curd is cut and heated, and then moulded into shapes.
A particularity of Mimolette is its maturation, which is done in cellars for several months. During this period, the cheese develops its characteristic rind and fruity, slightly nutty taste. Mimolette is also known for its orange colour, which comes from the addition of annatto, a natural dye. The Isigny Sainte-Mère mimolette won the prize for the best cheese in the world 2023.
