Michelin Guide 2025: A Celebration of French Gastronomy

The prestigious Michelin Guide France has unveiled its eagerly awaited 2025 restaurant selection at a glittering ceremony in Metz (Moselle). In its 125th year, the much revered, and sometimes feared, guide has awarded 78 new stars, including two at the coveted three-star level, at Le Coquillage in Brittany and Christopher Coutanceau in Charente-Maritime. 

There are also, nine new two-star restaurants, six of which have made a meteoric rise; 57 new one-stars, spread across all 13 regions of Metropolitan France; and 10 new green-star restaurants, bringing the total to an impressive 100 establishments recognised for their commitment to sustainable gastronomy

This year’s selection comprises 654 Michelin star restaurants across France, reaffirming L’Hexagone’s status as the global epicentre of fine dining. Gwendal Poullennec, international director of the Michelin Guide, said: We couldn’t have hoped for a better restaurant selection to celebrate the 125th anniversary of the Michelin Guide. This edition illustrates the abundance and commitment of the French gastronomic landscape, which continues to inspire the world.” 

The newly-crowned three Michelin-star restaurants 

Le Coquillage, Saint-Méloir-des-Ondes 

Nestled in the picturesque setting of a Malouin manor, Le Coquillage offers an unforgettable dining experience, now honoured with Three Michelin stars. Under the visionary leadership of Hugo Roellinger, the restaurant’s cuisine is a poetic ode to the sea. Signature dishes such as Chemin des douaniers – a masterful creation of spider crab, egg yolk cooked in cider vinegar, coral sauce, and seasonal herbs – demonstrate the chef’s extraordinary precision and artistry. Paying homage to the legacy of the Roellinger family and their passion for spices, Roellinger’s take on Breton blue lobster in two courses showcases the perfect harmony between tradition and innovation.

A triumphant return to the pinnacle of French cuisine, Christopher Coutanceau’s eponymous restaurant in La Rochelle has once again been awarded three Michelin stars. Known as the “fisherman chef”, Coutanceau is a champion of sustainable fishing and seasonal seafood, crafting a menu that is both respectful of nature and unparalleled in technique. Signature dishes such as the Pithiviers of scallops and the iconic Sardine from head to tail are testament to his deep connection to the ocean. The restaurant also joins Michelin’s Passion Dessert selection, thanks to the remarkable work of pastry chef Benoît Godillon. With a seamless blend of culinary mastery and sincere hospitality, presented by associate and loyal maître d’hôtel Nicolas Brossard, Christopher Coutanceau is once again at the forefront of French gastronomy. 

Green and economical 

The 2025 Michelin Guide France not only celebrates haute cuisine but also recognises the increasing importance of sustainability, with 100 green-star restaurants now recognised for their eco-conscious approach. Meanwhile, the Bib Gourmand selection, highlighting outstanding establishments offering great value, welcomes 77 new entries.
