
Lyon welcomes first shop dedicated to pâté-croûte
Hungry gourmets in Lyon have been flocking to a new shop which specialises solely in pâté-croûte. Called Bru, it offers 11 different takes on the classic French dish of meat terrine encased in flaky pastry, including a vegetarian and a sweet option. So far recipes have included a pâté-croûte of sweetbreads infused with coffee and tonka beans, tender poultry, delicate onions, pumpkin seeds and chestnuts marinated in duck fat; and the Thai, made with pork, chicken, coconut milk, lemongrass and ginger.
Former real estate agent Bruno Poncet, whose shop can be found on Rue Dubois, came up with the idea during the pandemic – and so far, locals have been praising the perfectly-cooked crust, exquisite flavours and all-round quality of the pastries.
Bruno told French newspaper Vingt Minutes: “I’ve always loved pâté-croûte as a consumer. But the turning point came when my family gifted me a cooking course at the Paul Bocuse Institute, where I learned how to make it.”
Concerned that the humble pâté-croûte was too often overshadowed by other, more popular charcuterie products, he decided to go all out and open a speciality shop. Several more training courses and apprenticeships later, all the hard work has paid off, and in 2022 he took silver at France’s best pâté-croûte contest.
