Everybody knows your vacation starts the minute you clear security and emerge into the perfumed aisles of Duty Free. Whether it’s a spot of last-minute shopping or a G&T after take-off, the journey is all part of the holiday experience. And for those travelling to France this summer, that experience just got even better.

Passengers in Air France’s La Première cabin will be able to enjoy a menu worthy of the country’s finest dining establishments, courtesy of Michelin-starred chefs Emmanuel Renaut and Claire Heitzler.

Emmanuel Renaut, holder of three Michelin stars and a Meilleur Ouvrier de France, has created the starters and mains. As a lover of Savoyard cuisine, he is keen for others to savour his mountain-inspired cuisine combining local produce with French culinary heritage. Expect an airy Beaufort PDO soufflé, celebrating the rich, nutty cheese of the Savoie region, and scallop quenelles with a delicate tangy cream sauce, a refined take on a classic Lyonnais speciality. Then there’s cream of mushroom with truffles, and foie gras with salsify, blueberry and onion chutney.

Renaut’s commitment to sustainability is clear – meats are sourced from responsible farms and seafood is selected for its ecological footprint. “Nature is a source of inspiration as infinite as it is fragile. My cuisine tells a story, one of simplicity, gourmet indulgence and comfort. This is what I wanted to share with Air France’s La Première customers,” he said.

On the desserts side, Claire Heitzler, former head pastry chef at Ladurée and named Gault & Millau’s Pastry Chef of the Year, has created a menu that celebrates French seasonal produce. Dishes include the triple chocolate cloud, a dessert of crunchy chocolate shortbread and creamy dark chocolate, and the Castanéa, a dessert with Ardèche chestnuts and Corsican clementines.
