Gluten-intolerant cake lovers need not miss out, thanks to Schär, who have come up with this yummy recipe for Brittany butter cake.
- 400 g Schär Mix C – Mix Pâtisserie (gluten-free flour)
- 180g butter at room temperature
- 250 g sugar
- 1 packet vanilla sugar
- 2 eggs
- 3 egg yolks
- 75 ml milk
- 2 tsp salt
- 150g candied fruit
1Preheat the oven to 220C.
2Pour the flour onto the worktop. Make a well in the middle and pour in the yeast, vanilla sugar, salt, whole egg, 2 egg yolks, softened butter and candied fruit.
3Mix all the ingredients together to make a paste. Pour the dough into a buttered and floured loose bottomed tin.
4Using a fork, draw a grid pattern over the top and brush with egg yolk. Bake in preheated oven.
