Gariguette strawberries with fresh goat cheese

Ingredients

  • 1 ¾ cups (14oz./400g) Brousse du Rove (fresh, soft goat milk curds)
  • Scant 1 cup (200ml) whipping cream
  • ½ cup (3 ½ oz./100g) sugar
  • 24 Gariguette strawberries

Directions

1Put the soft cheese, cream, and sugar in a bowl and whisk together until smooth. Put the mixture in a siphon and reserve
in the refrigerator.

2Wash the strawberries, without removing the hulls. Slice off the top quarter from each one and reserve. Make a hollow in each strawberry using a melon baller.

3Siphon a generous amount of the cheese mixture into the hollows and replace the reserved strawberry tops.
