Known for its vibrant markets, sun-drenched produce, and aromatic herbs, offers a culinary experience that is both rich and diverse.

Seafood is a staple, with dishes like bouillabaisse, a traditional fish stew from Marseille, showcasing the region’s maritime bounty. Other coastal specialties include pissaladière, a savoury tart topped with caramelized onions, anchovies, and olives, and brandade de morue, a creamy salt cod purée often served with bread or potatoes.

Key dishes include ratatouille, a vegetable stew made with eggplant, zucchini, peppers, and tomatoes, flavoured with herbs de Provence. Daube Provençale, a slow-cooked beef stew with red wine, garlic, and herbs, and aïoli, a garlic mayonnaise often served with boiled vegetables and fish, are also staples of the region’s culinary repertoire.

The region is also renowned for its wines, particularly the rosés of Provence, which are perfect for the warm Mediterranean climate. The Côtes de Provence and Bandol appellations produce some of the finest examples. Additionally, the region is known for its pastis, an anise-flavoured spirit that is a popular aperitif.

While not as famous for cheese as some other French regions, Provence-Alpes-Côte d’Azur offers several notable varieties, including Banon, a goat cheese wrapped in chestnut leaves, and Tomme de Provence, a semi-hard cheese with a nutty flavour.

The region’s sunny climate allows for an abundance of fresh produce. Provençal markets are brimming with tomatoes, zucchini, and eggplant, which are key ingredients in many local dishes. Herbs de Provence, a blend of thyme, rosemary, oregano, and lavender, flavour many regional recipes, while olives and olive oil are essential components of Provençal cuisine.

Provence-Alpes-Côte d’Azur also has a sweet side, with desserts that reflect the region’s love for fresh, local ingredients. Tarte Tropézienne, a brioche filled with cream originating from Saint-Tropez, and Calissons d’Aix, almond-shaped candies made from ground almonds and candied melon, are beloved regional treats.
